Abstract: The aim of this study was investigate Jerusalem - a multi 1-4 meters tall grass that originates from South America. The drying process and investigate and its impact on the production keeping.In 2012 there was researched , Jerusalem, influence of the drying process of Jerusalem and changes in chemical composition of Jerusalem grown in Salcininkai in farmes production areas. It was found that the optimum drying time was achieved at 50 0C temperature. At these temperatures, the recommended moisture content of 10% is achieved through 25 hour. Drying at high intensities ventilation recommended moisture content can be achieved withir 6 days. Chemical composition remained almost unchanged, suggesting that the storage period can be lengthened without losing valuable properties
