Abstract: This research work focuses on the evaluation of the antimicrobial activity of some Azorean honeys as a possibility for control of food pathogens. The inhibitory action of ten honeys was tested against six strains of Staphylococcus aureus by the agar well-diffusion method. Total antibacterial activity was evaluated by measuring the clear zone around the well, and expressed in terms of equivalent phenol concentration.
