Abstract
Tyrimo objektas – Kvietinių miltų makaronai, praturtinti dilgėlių ir kanapių lapų milteliais.
Tyrimo tikslas: Ištirti makaronų praturtintų skirtingais kanapių ir dilgėlių lapų miltelių priedais cheminę sudėtį ir palyginti jų kokybę.
Tyrimo uždaviniai:
1. Ištirti ir įvertinti kvietinių makaronų miltų ir jų gamybai panaudotų kanapių ir dilgėlių lapų miltelių cheminę sudėtį.
2. Nustatyti ir palyginti makaronų su skirtingais kanapių ir dilgėlių lapų miltelių priedais cheminę sudėtį.
3. Atlikti makaronų su skirtingais kanapių ir dilgėlių lapų miltelių priedais tekstūros analizę ir palyginti juslines savybes.
Darbo metodai: Eksperimentas buvo atliekamas 2020–2021 m. Tyrimų analizės buvo atliekamos VDU ŽŪA Maisto žaliavų, agronominių ir zootechninių tyrimų bei Atviros prieigos centras Augalinių žaliavų kokybės laboratorijoje. Dilgėlių lapai ir kanapių lapai džiovinti specialioje džiovinimo spintoje prie 38–40 ⁰C temperatūros, po to sudėti į hermetinius indus ir iki tyrimų laikyti tamsioje ir sausoje vietoje. Standartiniais metodais miltuose ir dilgėlių bei kanapių lapų milteliuose nustatyta sausųjų medžiagų kiekis, baltymų kiekis. Buvo įvertinta virtų makaronų su augaliniais priedais spalva ir tekstūra. Taip pat atliktas virtų makaronų su augaliniais priedais juslinis vertinimas. Tyrimų duomenys apdoroti dviejų veiksnių dispersinės analizės metodu (ANOVA), naudojant kompiuterinę programą STATISTIKA (STATISTICA 9). Skirtumų tarp vidurkių statistinis patikimumas įvertintas Fišerio testu (p<0,05).
Darbo rezultatai: Atlikti tyrimai parodė, kad kanapių ir dilgėlių lapų milteliuose buvo nustatyti esminiai didžiausi pelenų, cinko, baltymų ir ląstelienos kiekiai lyginant su kvietiniai miltais, o kanapių milteliuose – esminiai didžiausias geležies kiekis. Naudoti visi skirtingi dilgėlių ir kanapių lapų miltelių priedai makaronuose esminiai didino pelenų ir geležies bei cinko kiekius, ypač didino kanapių miltelių 3 % priedas. Baltymų ir ląstelienos kiekius esmingai didino naudoti 2 % ir 3 % priedai, ypač ląstelienos kiekį 3 % kanapių miltelių priedas. Naudotas dilgėlių lapų 2 % ir 3 % priedais esminiai didino makaronų rūgštingumą. Esminiai kiečiausi ir lipniausi buvo makaronai pagaminti su dilgėlių lapų miltelių 3 % priedu, kartus su 1% bei 2 % priedu makaronai buvo tamsiausi, intensyviausių žalios ir geltonos atspalvių. Visi naudoti augaliniai priedai esminiai didino makaronų kvapo ir skonio juslines savybes, o naudotas kanapių 2 % ir 3 % priedas didino makaronų tekstūros kruopėtumą bei stangrumą.

Research aim: to investigate the chemical composition of pasta enriched with different hemp and nettle leaf powder additives and to compare their quality.
Objectives:
1st To investigate and evaluate the chemical composition of wheat pasta flour and hemp and nettle leaf powder used in their production.
2nd Determine and compare the chemical composition of pasta with different hemp and nettle leaf powder additives.
3rd Perform texture analysis of pasta with different hemp and nettle leaf powder additives and compare sensory properties.
Research methods: The experiment was carried in 2020–2021. Research analyzes were performed at Vytautas Magnus University Food Raw Materials, Agronomic and Zootechnical Research and Open Access Center Plant Raw Materials Quality Laboratory. Nettle leaves and hemp leaves were dried in a special oven at 38-40 ⁰C, then placed in airtight containers and stored in a dark and dry place until analysis. The dry matter content and protein content of flour and nettle and hemp leaf powder were determined by standard methods. The color and texture of cooked pasta with vegetable additives was evaluated. A sensory evaluation of cooked pasta with vegetable additives was also performed. The research data were processed by two-way analysis of variance (ANOVA) using the computer program STATISTIKA (STATISTICA 9). The statistical reliability of differences between means was assessed by Fisher's test (p <0.05).
Research results: Studies have shown that hemp and nettle leaf powder have significant maximum levels of ash, zinc, protein and fiber compared to wheat flour, and hemp powder has significant maximum levels of iron. The use of all the different additives of nettle and hemp leaf powder in pasta significantly increased the ash and iron and zinc content, especially the addition of 3% hemp powder. Protein and fiber contents were significantly increased by the use of 2% and 3% additives, especially the 3% fiber content by the addition of cannabis powder. The addition of nettle leaves 2% and 3% significantly increased the acidity of the pasta. The main hardest and most sticky pasta was made with the addition of nettle leaf powder 3%, times with the addition of 1% and 2% the pasta was the darkest, most intense shades of green and yellow. All the vegetable additives used significantly increased the sensory properties of the smell and taste of the pasta, and the 2% and 3% addition of hemp used to increase the texture and firmness of the pasta texture.
