Abstract
Tyrimo atlikimo vieta: Nacionalinis maisto ir veterinarijos rizikos vertinimo institutas, Kauno teritorinio skyriaus, cheminio ir mikrobiologinio tyrimų poskyrių laboratorijos.
Tyrimo objektas: tyrimui pasirinkti skirtingų gamintojų vaniliniai varškės sūreliai, kurie buvo įsigti Kauno miesto prekybos centre Hyper Maxi.
Tyrimo tikslas - ištirti ir išanalizuoti Lietuvos rinkoje parduodamų varškės sūrelių kokybę.
Tyrimo uždaviniai:
1. Atlikti mikrobiologinius tyrimus atrinktuose varškės sūrelių mėginiuose (koliforminių bakterijų skaičių, mielių ir pelėsių kiekius);
2. Įvertinti varškės sūrelių kokybę (pH vertę, bendrąjį rūgštingumą ir valgomosios druskos kiekį);
3. Nustatyti varškės sūrelių cheminę sudėtį (drėgmės (sausųjų medžiagų), pelenų, baltymų ir riebalų kiekius).
Tyrimo metodai: Tiriamuose varškės sūreliuose atlikti mikrobiologiniai ir cheminiai tyrimai. Mikrobiologiniai tyrimai – koliforminių bakterijų skaičius, mielių ir pelėsių kiekis. Cheminiai tyrimai - drėgmės (sausųjų medžiagų) kiekio, riebalų kiekio, baltymų kiekio, pelenų kiekio, valgomosios druskos kiekio, titruojamo rūgštingumo kiekio nustatymas ir pH vertės nustatymas.
Tyrimo rezultatai: Pagrindiniai mikrobiologiniai tyrimai varškės sūreliuose buvo koliforminių bakterijų skaičius, mielių ir pelėsių kiekis. Koliforminių bakterijų ir pelėsių visuose tirtuose mėginiuose neaptikta, o mielių skaičius svyravo nuo 60 iki 44000 KSV/1g. Pagal atliktus pH vertės ir titruojamamo rūgštingumo % tyrimų rezultatus, galime teigti, kad visi sūrelių mėginiai atitiko reglamentuojamus kokybės rodiklius. Keturiuose iš penkių tirtų sūrelių mėginiuose valgomosios druskos kiekiai buvo didesni, nei nurodyta ant produktų pakuočių, išskyrus VP mėginį kur nustatytas valgomosios druskos kiekis - 0,10 % buvo žymiai mažesnis nei nurodyta ant produkto pakuotės (0,15 %). Pagal mėginiuose atliktus drėgmės (sausųjų medžiagų) kiekio tyrimų rezultatus, galime teigti, kad visų penkių sūrelių mėginių, drėgmės (sausųjų medžiagų) kiekio rodikliai atitinka reglamentuojamus kokybės rodiklius. Ženkliai daugiau riebalų nustatyta FM mėginyje – 26,85 %. Visuose penkiuose tirtuose sūrelių mėginiuose riebalų kiekis % buvo mažesnis, nei nurodyta ant produkto pakuočių. Keturiuose varškės sūrelių mėginiuose (PŽ,VP, ŽM ir RP) buvo nustatyti panašūs ir esmingai didesni pelenų kiekiai, nei FM mėginyje. Esmingai daugiau baltymų buvo PŽ mėginyje-15,71 %. Keturiuose iš penkių tirtų sūrelių mėginių baltymų kiekis buvo mažesnis, nei nurodyta ant produktų pakuočių, tik VP mėginyje baltymų kiekis buvo panašus į deklaruojamą etikėteje.

Object of the research: vanilla curd cheeses of different manufacturers, which were purchased in Kaunas city shopping center Hyper Maxi, were selected for the research.
The aim of the research is to investigate and analyze the quality of curd cheeses sold on the Lithuanian market.
The objectives of the research research:
1. To perform microbiological tests on selected samples of curd cheese;
2. To evaluate the quality of curd cheese (pH value, acidity and table salt content);
3. To evetermine the chemical composition (dry matter, ash, protein and fat content) of curd cheeses.
Test methods: Microbiological and chemical tests were done on the curd cheeses: microbiological tests – coliforms count, yeast and mould count. Chemical tests - determination of moisture (dry matter) content, total fat content, proteins content, ash content, table salt content, titratable acidity content and pH value.
Research results: The main microbiological studies of curd cheeses were coliforms count yeast and mould count. Coliform bacteria and mould were not detected in all tested samples and of yeasts ranged from 60 to 44,000 CFU / 1g. Based on the results of the tests of pH value and% titratable acidity, we can state that all cheese samples met the regulated quality indicators. In four of the five cheese samples tested, the amounts of table salt were higher than indicated on the product packaging, except for the VP sample, where the amount of table salt was 0.10% significantly lower than indicated on the product packaging (0.15%). According to the research results of moisture (dry matter) tests done on the samples, we can state that the moisture (dry matter) indicators of all five cheese samples correspond to the regulated quality indicators. Significantly more fat was detected in the FM sample - 26.85%. In all five cheese tested samples, the fat content in% was lower than indicated on the product packaging. Four curd cheese samples (PŽ, VP, ŽM and RP) had similar and significantly higher ash contents than the FM sample. Significantly more protein was present in the PC sample - 15.71%. In four of the five cheese tested samples, the protein content was lower than indicated on the product packaging, with only the VP sample having a protein content similar to that declared on the label.
