Abstract
Apelsinų kokybės tyrimai buvo atlikti 2019–2020 metais VDU ŽŪA Agronomijos fakulteto Žemės ūkio ir maisto mokslų institute. Maisto kokybės tyrimų laboratorijoje buvo tirta apelsinų kokybė (askorbo rūgšties, nitratų ir organinių rūgščių (citrinų r. ir obuolių r.)) kiekiai. NMVRI laboratorijoje apelsinuose buvo įvertintas pesticidų likučių kiekis.
Tyrimo objektas: Druskų tirpaluose mirkyti apelsinai.
Hipotezė: tikėtina, kad druskos tirpalų poveikyje sumažėja apelsinuose pesticidų likučių kiekis,- bei nežymiai pakinta vaisių cheminė sudėtis.
Tyrimo tikslas: įvertinti skirtingų druskos tirpalų įtaką apelsinų vaisių kokybei.
Tyrimo uždaviniai:
1. Ištirti ir įvertinti tirpalų įtaką apelsinų vaisių cheminei sudėčiai;
2. Ištirti ir įvertinti 1 proc. koncentracijos NaHCO3 tirpalo įtaką pesticidų likučių kiekiui apelsinų vaisiuose.
3. Ištirti ir įvertinti distiliuoto vandens įtaką pesticidų likučių kiekiui apelsinų vaisiuose.
4. Ištirti ir įvertinti 1 proc. koncentracijos NaCl tirpalo įtaką pesticidų likučių kiekiui apelsinų vaisiuose.
Tyrimo metodai: Organinių rūgščių (citrinų r. ir obuolių r.) kiekis - titruojamasis rūgštingumas (%); askorbo rūgšties kiekis (mg 100g-1) - Murri titrimetriniu; nitratų kiekis (mg l-1) – potenciometriniu metodu; pesticidų likučiai (mg kg-1) – GC ir LC analizės multimetodas atlikus acetonitrilo ekstrahavimą / skaidymą ir valymą dispersiniu SPE - Modulinis QuEChERS metodas (NMVRVI).
Tyrimų metu iš tirtų 385 pesticidų, tiabendazolas, imazalilas ir pirimetanilas, buvo aptikti didesnėmis, nors ir neviršijančiomis leistinųjų, normomis. Vaisiai buvo mirkyti 30 min tirpaluose: distiliuotame vandenyje, 1 proc. konc. NaCl ir 1 proc. konc. NaHCO3 tirpaluose. Efektyviausiai pesticidų likučių kiekį sumažino 1 proc. konc. NaHCO3 tirpalas: tiabendazolo – 5,3, pirimetanilo – 2,05, imazalilo – 2,1 karto. Esmingai mažiausi vitamino C nuostoliai, tačiau efektyviausias nitratų kiekio sumažinimas buvo gautas, kai vaisiai buvo mirkyti NaCl tirpale. Esmingai didžiausi organinių rūgščių nuostoliai susidarė po vaisių mirkimo distiliuotame vandenyje ir NaCl tirpale.

Research of quality of orange fruits was conducted in 2019–2020 at the Institute of Agricultural
and Food Sciences of the Faculty of Agronomy of Academy of Agriculture, Vytautas Magnus University.
The quality of oranges (ascorbic acid, nitrates and organic acids (citric acid and malic acid)) was tested in
the Laboratory of Food Quality Research. Pesticide residues in oranges were assessed in the laboratory of
the National Institute for Food and Veterinary Risk Assessment.
Object of research: Orange fruits soaked in salt solutions
Hypothesis: The effect of saline solutions is likely to reduce the amount of pesticide residues in
oranges and is likely to change slightly the chemical composition of the fruits.
The aim of the study: To evaluate the influence of different salt solutions on the quality of orange
fruits.
Research tasks: to investigate and evaluate the influence:
1. of solutions on the chemical composition of orange fruit;
2. of 1% NaHCO3 solution on the amount of pesticide residues in orange fruit;
3. of distilled water on the amount of pesticide residues in orange fruit;
4. of 1% NaCl solution on the amount of pesticide residues in orange fruit.
Research methods: organic acids – by titratable acidity (%) method; ascorbic acid (mg 100g-1
) –

pyrimethanil, were detected at higher, albeit less than, acceptable limits. The fruits were soaked for 30
minutes in different solutions: distilled water, NaCl (1% w/v solution in water) and NaHCO3 (1% w/v
solution in water). The results of the study showed that NaHCO3 had the most significant effect on the the
decrease in the amount of pesticide residues. Residues of thiabendazole decreased by 5.3, pyrimethanil -
2.05, imazalil - 2.1 times. Significantly lowest losses of the amount of vitamin C but most effective reduced
of the amount of nitrates have been investigated when fruits were soaked in the NaCl solution. Significantly
the highest losses of organic acids occurred after soaking the fruit in distilled water and NaCl solution.
