Abstract
Tyrimo atlikimo vieta - eksperimentiniai tyrimai buvo vykdomi 2019 metais Vytauto Didžiojo universitete, Agronomijos fakultete, Žemės ūkio ir maisto mokslų instituto, Maisto žaliavų kokybės, Maisto žaliavų, agronominių ir zootechninių tyrimų, bei Atviros prieigos Žemės ir miškų jungtinių tyrimų centro Augalinių žaliavų kokybės tyrimų laboratorijoje. Tyrime buvo naudojama juodųjų serbentų, dygliuotojo šaltalankio ir juodavaisių aronijų uogų išspaudos, kurių į produktą buvo dedama 5 % ir 10 %. Tyrimo tikslas ir uždaviniai - nustatyti įvairių uogų išspaudų įtaką traškios duonelės kokybei. Ištirti traškios duonelės su šaltalankio, juodųjų serbentų, aronijų išspaudų kokybės rodiklius (drėgmės, žaliųjų pelenų, žaliosios ląstelienos, žaliųjų riebalų ir žaliųjų baltymų kiekius), nustatyti fizines savybes (tektūrą ir spalvą), apskaičiuoti kaloringumą ir įvertinti juslinius rodiklius.Tyrimo metodai - standartiniais metodais traškioje duonelėje nustatyta: drėgmės kiekis, žaliųjų pelenų kiekis, žaliosios ląstelienos kiekis, žaliųjų riebalų kiekis ir žaliųjų baltymų kiekis. Taip pat buvo nustatyta tekstūros traškios duonelės tvirtumas, trapumas ir spalvos intensyvumas. Apskaičiuotas kaloringumas ir atliktas juslinis vertinimas. Tyrimų duomenys apdoroti dviejų veiksnių dispersine analize. Tyrimo rezultatai – nustatyta, kad uogų išspaudų kiekis turi įtakos traškios duonelės kokybei. Uogų išspaudų 10 % priedas didino drėgmės kiekį gaminyje. Drėgmės kiekis traškioje duonelėje su aronijų, juodųjų serbentų ar šaltalankio išspaudomis svyravo nuo 4,08 iki 4,31 % . Taip pat išspaudų kiekis lemia ir ląstelienos kiekį. Nustatyta, kad esmingai mažiausiu ląstelienos kiekiu pasižymėjo traški duonelė su 5 ir 10 % juodųjų serbentų išspaudų kiekiu. Ženkliai didesni ląstelienos kiekiai nustatyti likusiuose produktuose, kur buvo naudotos šaltalankių ir aronijų uogų išspaudos. Riebalai ir pelenai kito nežįmiai. Nustatyta, kad esmingai didžiausiu riebalų kiekiu išsiskyrė duonelė su 10 % šaltalankio išspaudų priedu. Esmingai išreikštas geltonumas (b*) nustatytas traškioje duonelėje su 5 % ir 10 % šaltalankio uogų išspaudų. Intensyviausia raudona spalva (a*) nustatyta traškioje duonelėje su 10 % šaltalankio uogų išspaudų.
Research object - experimental research was carried out in 2019 at Vytautas Magnus University, Faculty of Agronomy, Institute of Agricultural and Food Sciences, Food Raw Materials Quality, Food Raw Materials, Agronomic and Zootechnical Research, and Plant Raw Materials Quality Research Laboratory of the Open Access Joint Land and Forest Research Center. The research used blackcurrant, sea buckthorn and chokeberry berry-squeeze, to which 5% and 10% were added to the product. Research aim and objectives - to determine the influence of different berry-squeeze on the quality of crispy bread. Investigate the quality indicators (moisture, green ash, green fiber, green fat and green protein content) of crispy bread with sea buckthorn, black currant, chokeberry squeeze, determine physical properties (texture and color), calculate calorific value and evaluate sensory indicators. Research methods – In the crisp bread the following estimates: moisture content, green ash content, crude fiber content, crude fat content and crude protein content were determined using conventional methods. Established the firmness, fragility and color intensity of the crispy bread. Calculated energy value and sensory evaluation was performed. The research data were processed by analysis of variance of two factors.
Research results - it was found that the amount of berry squeeze affects the quality of crispy bread. The addition of 10 % berry pulp significantly increased the moisture content in the product. The moisture content of the crispy bread with chokeberry, black currant or sea buckthorn squeeze ranged from 4.08 to 4.31 %. The amount of squeeze also determines the amount of fiber. Crispbread with 5 and 10 % blackcurrant squeeze was found to have the lowest fiber content. Significantly higher fiber contents were found in the remaining products where sea buckthorn and chokeberry berry squeeze were used. Fat and ash changed slightly. Bread with the addition of 10 % sea buckthorn squeeze was found to have a significantly higher fat content. Substantially pronounced yellowness (b *) was in crispy bread with 5 % and 10 % sea buckthorn squeeze. The most intense red color (a *) was found in crispy bread with 10 % sea buckthorn squeeze.
