Abstract
Tyrimo objektas – mėsinių veislių galvijų mėsa.
Tyrimo tikslas – įvertinti labiausiai paplitusių Lietuvoje mėsinių veislių galvijų mėsos kokybę.
Tyrimo uždaviniai :
1. Nustatyti skirtingų veislių mėsinių galvijų mėsos cheminę sudėtį.
2. Įvertinti skirtingų veislių mėsinių galvijų mėsos fizikochemines ir fizikines savybes.
3. Nustatyti ir įvertinti riebalų rūgščių kiekį skirtingų veislių mėsinių galvijų mėsoje
Darbo rezultatai. Pagal mėsos cheminę sudėtį baltymų didžiausias kiekis nustatytas Limuzinų veislės, o mažiausias Aubrakų galvijų mėsoje. Skirtumas tarp jų sudarė 2,17 proc. (p<0,05). Fizokocheminių rodiklių analizėje nustatyta , kad kiečiausia mėsa yra Aubrakų veislės galvijų, švelniausia mėsa nustatyta Limuzinų veislės galvijams. Skirtumas sudarė 0,73 kg/cm2 (p<0,05). Didžiausiu rausvumu ir gelsvumu pasižymėjo Limuzinų veislės mėsiniai galvijai, mažiausiu Angusų veislės galvijai. Rausvumo skirtumas tarp jų sudarė 9,29 (p<0,05), gelsvumo 8,26 (p<0,05). Ištyrus riebalų rūgščių kiekį ir jų santykį skirtingų veislės galvijų mėsoje nustatyta, kad sočiųjų riebalų daugiausiai buvo Angusų veislės galvijų, o mažiausiai – Aubrakų veislės galvijų mėsoje. Skirtumas sudarė 4,77 proc. Nustatyta , kad grynaveislių galvijų veislių mėsoje esantis sočiosios riebalų rūgšties C16:0 kiekis tarpusavyje, skiriasi 3,67 proc. daugiau yra Limuzinų veislės galvijų mėsoje, nei Aubrakų, atitinkamai 6,36 proc. daugiau Angusų veislės galvijų mėsoje.

The object of the research is the meat of beef different cattle breeds.
The aim of the study is to evaluate the meat quality of the most common beef breeds in Lithuania.
Research tasks:
1. To determine the chemical composition of the meat of different breeds of beef cattle.
2. To evaluate the physicochemical and physical properties of meat of different breeds of beef cattle.
3. To determine and evaluate the content of fatty acids in the meat of different breeds of beef cattle
Results of work. According to the chemical composition of the meat, the highest protein content was found in the meat of the Limousin breed and the lowest in the meat of Aubrac cattle. The difference between them was 2.17 percent. (p <0.05). In the analysis of physicochemical parameters, it was found that the hardest meat is of Aubrakai cattle, the softest meat was found of Limousin cattle. he difference was 0.73 kg / cm2 (p <0.05). Beef cattle of the Limousin breed had the highest redness and yellowness, while Angus cattle had the lowest. The difference in redness between them was 9.29 (p <0.05), yellowness 8.26 (p <0.05). Examination of the content of fatty acids and their ratio in the meat of different breeds of cattle showed that the highest content of saturated fats was in the meat of Angus cattle and the least in Aubrakai cattle. The difference was 4.77 percent. It was found that the content of saturated fatty acid C16: 0 in the meat of purebred cattle breeds differs by 3.67%. there are more in the meat of Limousin cattle than in Aubraki, 6.36% more in the meat of Angus cattle.
