Abstract
Tyrimo tikslas – ištirti ekstrakcijos sąlygų įtaką skirtingų veislių mėtų vandeninių ekstraktų kokybei.
Tyrimo uždaviniai: 1.Įvertinti ekstrahavimo sąlygų įtaką skirtingų veislių mėtų vandeninių ekstraktų cheminei sudėčiai ir antioksidaciniam aktyvumui. 2.Nustatyti ekstrahavimo sąlygų įtaką mėtų vandeninių ekstraktų spalvai.
Tyrimai atlikti VDU Žemės ūkio akademijos Agronomijos fakulteto Žemės ūkio ir maisto mokslų instituto laboratorijose. Tyrimo rezultatai: Tirpių sausųjų medžiagų kiekis vandeniniuose ekstraktuose ruoštuose naudojant 70 ᵒC temperatūros vandenį ir ekstrahuojant 5 min. lyginant su ruoštais su 90 ᵒC temperatūros vandeniu 30 min. buvo mažesnis ir skyrėsi nuo 2,85 iki 3,10 karto, o vitamino C kiekis nuo 1,28 iki 1,58 karto. Fenolinių junginių kiekis ekstraktuose ruoštuose su 90 ᵒC temperatūros vandeniu 30 min. buvo nuo 5,97 iki 102, 97 kartų didesnis, nei 70 ᵒC, 5min. Lyginant ekstraktų antioksidacinį aktyvumą, nustatyta, kad ekstraktų ruoštuose su 70 ᵒC vandeniu 5 min. ir 90 ᵒC, 30 min. jis skyrėsi nuo 1,28 iki 1,40 karto, didesnis buvo ekstraktų, ruoštų naudojant aukštesnės temperatūros vandenį ir ekstrahuojant ilgiau. Žemesnė ekstrakcijos temperatūra ir trumpesnė ekstrakcijos trukmė teigiamai veikė ekstraktų spalvą. Ekstraktai ruošti naudojant 70 ᵒC temperatūros vandenį 5 min. pasižymėjo nuo 0,81 iki 2,02 kartų šviesesniu ir žalesniu atspalviu, nei 90 ᵒC, 30 min.

Research aim – to examine the influence of extraction conditions on the quality of different varieties of mint aqueous extracts.
Objectives: 1.To evaluate the influence of extraction conditions on the chemical composition and antioxidant activity of different varieties of mint aqueous extracts. 2.To determine the influence of extraction conditions on the color of aqueous mint extracts.
The research was performed in the laboratories of the Institute of Agriculture and Food Sciences of the Faculty of Agronomy of VMU Academy of Agriculture. Reasearch results: The content of dry soluble matter in aqueous extracts prepared with water at 70 ᵒC and extraction for 5 min. compared to prepared with water at 90 ᵒC for 30 min. was lower and ranged from 2,85 to 3,10 times and vitamin C content from 1,28 to 1,58 times. Content of phenolic compounds in extracts prepared with water at 90 ᵒC for 30 min. was from 5,97 to 102,97 times higher than 70 ᵒC, 5min. Comparing the antioxidant activity of the extracts, it was found that the extracts prepared with 70 ᵒC water for 5 min. and 90 ᵒC, 30 min. ranged from 1,28 to 1,40 times, higher was in extracts with water at higher temperature and longer extraction time. The lower extraction temperature and shorter extraction time had a positive effect on the color of the extracts. The extracts prepared using 70 ᵒC water for 5 min. was from 0,81 to 2,02 times lighter and greener than 90 ᵒC for 30 min.
