Abstract
Magistrantūros baigiamajame darbe pateikiama mėlynių sulčių ir išpurkštų mėlynių sulčių miltelių cheminė sudėtis bei fizikinės savybės. Tyrimai vykdyti 2020 metais Vytauto Didžiojo universiteto Žemės ūkio akademijos atviros prieigos Žemės ir miškų jungtinio tyrimų centro Augalinių žaliavų kokybės laboratorijoje. Tyrimo tikslas – įvertinti maltodekstrino ir inulino įtaką džiovintų mėlynių sulčių miltelių kokybei. Tyrimo uždaviniai: 1. Įvertinti priedų įtaką džiovintų mėlynių sulčių miltelių išeigai. 2. Nustatyti priedų įtaką džiovintų mėlynių sulčių miltelių cheminei sudėčiai ir antioksidaciniam aktyvumui. 3. Nustatyti priedų įtaką džiovintų mėlynių sulčių miltelių fizikinėms savybėms. Darbo metodai: Tyrimams naudotas kukurūzų maltodekstrinas (14 – 17 dekstrozės ekvivalentų) ir cikorijų inulinas. Į mėlynių sultis įdėta 10, 20 ir 30 % mėlynių sulčių masės maltodekstrino, 10, 20 ir 30 % mėlynių sulčių masės maltodekstrino ir inulino santykiu 1:1. Tokie patys priedai buvo dedami į mėlynių sultis prieš tai juos ištirpinus distiliuotame vandenyje santykiu 1:2 (kapsuliavimo priedas:distiliuotas vanduo). Mėlynių sultys su priedais buvo džiovinamos naudojant purkštuvinę džiovyklę LabPlant SD-06 (Keison products, United Kingdom). Standartiniais metodais įvertinta mėlynių sulčių cheminė sudėtis ir spalva. Taip pat nustatyta mėlynių sulčių miltelių išeiga, bendras fenolinių junginių, antocianinų kiekis ir išsilaikymas bei miltelių antioksidacinis aktyvumas. Nustatytos mėlynių sulčių miltelių spalvos koordinačių L*, a* ir b* vertės. Apskaičiuoti išvestiniai spalvos rodikliai: bendras spalvos pokytis (ΔE), spalvos grynumas (C*), spalvos tonas (h°), patamsėjimo indeksas (BI). Mėlynių sultyse nustatyta 11,3 % tirpių sausųjų medžiagų, 2,14 mg g-1 fenolinių junginių, 0,57 mg g-1 antocianinų, o antioksidacinis aktyvumas siekė 52,90 %. Didžiausia miltelių išeiga nustatyta naudojant 30 % tirpintą vandenyje maltodekstrino priedą (4,40 %). Priedo tirpinimas vandenyje lėmė esmingai mažesnį fenolinių junginių ir antocianinų kiekį milteliuose. Mėlynių sulčių milteliuose su 20 % maltodekstrino ir inulino priedu nustatytas esmingai didžiausias fenolinių junginių kiekis (938,99 mg GRE 100 g-1), o milteliuose su 10 % maltodekstrino priedu nustatytas esmingai didžiausias antocianinų kiekis ir jų išsilaikymas (328,03 mg 100g-1 ir 82,67 %). Esmingai didžiausias antioksidacinis aktyvumas nustatytas mėlynių sulčių miltelių su 20 % maltodekstrino priedu (91,44 %) ir 20 % maltodekstrino ir inulino priedu (91,79 %). Šviesesnę miltelių spalvą lėmė didesnis priedo kiekis ir jo tirpinimas vandenyje. Esmingai tamsiausi mėlynių sulčių milteliai buvo su 10 % maltodekstrino (25,07 NBS vnt.), o šviesiausi su 30 % tirpinto maltodekstrino priedu (L* – 48,92 NBS vnt.). Esmingai raudoniausi milteliai buvo purkšti su vandenyje ištirpintu 20 % maltodekstrino, taip pat su 30% maltodekstrino ir inulino priedu. Geltoniausia spalva išsiskyrė milteliai su 10 % maltodekstrino priedu, kuris buvo ištirpintas vandenyje ir su 10 % maltodekstrino priedu netirpintu vandenyje. Esmingai didžiausias spalvos pokytis nustatytas su 30 % tirpinto maltodekstrino priedu (19,8), o esmingai mažiausias – su 20 % tirpinto maltodekstrino ir inulino priedu (8,01). Esmingai gryniausia, sodriausia (C*) spalva buvo miltelių su 20 % tirpinto maltodekstrino priedu ir 30 % maltodekstrino ir inulino priedu. Įvertinus tamsumo (rudumo) indeksą, nustatyta, jog milteliai su 10 % maltodekstrino buvo tamsiausi.
Aim of the research – to evaluate the influence of maltodextrin and inulin on the quality of dried blueberry juice powder. Objectives of the research: To evaluate the influence of additives on the yield of dried blueberry juice powder. To determine the influence of additives on the chemical composition and antioxidant activity of dried blueberry juice powder. To determine the influence of additives on the physical properties of dried blueberry juice powder. Research methods: Corn maltodextrin (14 – 17 dextrose equivalent) and chicory inulin were used for the experiment. The blueberry juice was mixed with 10, 20 and 30 % of maltodextrin, also with 10, 20 and 30 % of maltodextrin and inulin at the ratio 1:1. The same additives were added to the blueberry juice before dissolving them in distilled water at the ratio 1:2 (the additive:distilled water). The juice with additives was dried with the spray dryer LabPlant SD-06 (Keison products, United Kingdom). The chemical composition and color of blueberry juice were evaluated by standard methods. Also were determined the yield of blueberry juice powder, the total phenolic compounds content, anthocyanin content and the retention of anthocyanin and antioxidant activity. The color coordinates of L*, a* and b* were determined in the blueberry juice powder. Calculated color parameters: the total color difference (ΔE), chroma (C*), color tone (h°), browning index (BI). The soluble solids content of blueberry juice was 11.3%. The total content of phenolic compounds in blueberry juice was 2.14 mg g-1, the content of anthocyanin – 0.57 mg g-1, the antioxidant activity – 52.90%. The highest yield was determined with 30% dissolved maltodextrin additive (4.40 %). Blueberry juice powder with 20 % maltodextrin and inulin produced the highest content of phenolic compounds (938.99 mg GRE 100 g-1). The highest anthocyanin content and retention was found in the powder with 10% maltodextrin additive (328.03 mg 100g-1 and 82.67 %). The highest antioxidant activity was found in blueberry juice powder with 20% maltodextrin (91.44%) and 20% maltodextrin and inulin additive (91.79%). The lightness in color of the powder, was directly influenced by both the amount of additive and it being dissolved. Blueberry juice powder with 10 % maltodextrin produced the darkest color (25.07 NBS units) and that with 30 % dissolved maltodextrin produced the lightest (L* – 48.92 NBS units). The powder with 20 % maltodextrin dissolved in water and 30 % maltodextrin and inulin, produced the reddest color. The yellowest color was a powder with 10% maltodextrin dissolved in water and with 10% maltodextrin undissolved in water. The most notable color difference was determined with the addition of 30% dissolved maltodextrin (19.8), and the least notable with the addition of 20% dissolved maltodextrin and inulin (8.01). The purest (C *) color was the powder with 20% dissolved maltodextrin and 30% maltodextrin and inulin. Evaluation of the darknening (browning) index showed that the powder with 10% maltodextrin was the darkest.
